I use it in gumbo and red beans and rice.
You mean darker if you are making something more gamey and lighter if it is a seafood gumbo?

Very long story short, I used the GMAC website to pay my car bill. I even got a confirmation letter. After receiving the confirmation letter that said my bill had been paid, I assumed my bill had been paid and didn't follow it up beyond. GMAC took me to collections over the payment. Those people are jerks. After several attempts to pay online (and several confirmation emails), the issue was resolved by mailing a check and I'm STILL getting threatening letters from them.

I hate the term "historically black college". What's up with calling them "historically black colleges"? Are any of the HBCs not still black. Shouldn't it be changed to HAAC now?

I'm ambivalent about the term, but I think the distinction is that they are no longer solely black. Predominately, sure, but not solely black. A few of them are actually approaching regular public school ethnic mixes. But, "historically," they were opened for black kids to have a place to study, since the other universities wouldn't let them in.
Maybe that should be the name. "Colleges and Universities that were opened because all the available schools were for whites only." CUTWOBAUSWFWOs. :D

No a seafood gumbo roux is usually about as dark as you can get. Chicken and Sausage is lighter. I stay away from gamey.

I have always done the opposite. What do you put in your seafood gumbo?
Re: Comments That Don't Warrant A Thread
Why would you vary the roux based on the contents? I always do it VERY dark.
I don't do seafood gumbos anyway because I can find better uses for the high dollar meat.

I don't do seafood gumbo regularly, but in the rare instances that I have, I made the roux lighter so that it didn't overpower the seafood.

Totally on the suggestion of Paul Prudhomme.
