I love chicken hot and fast. I’ll do chicken around 300 until they temp about 145 in the breast, then I blast em up to about 400 for the last 20 degrees. Gets the skin nice and crisp.

I'm always a fan of cooking low and slow so I think go longer not hotter.

Seems like it’s not gonna take too long. 1:45 in and we are already at 149 internal temp.

I like slow smoked chicken, but I'd rather have it just cooked in the oven or crock pot. I never waste a good fire on chicken alone. Gotta have some other meat burning too.
