    IMO, brisket is difficult to keep moist. Low and slow in the oven seems to be fool proof using coke, sprite, etc. to keep it moist. I've had them turn out good on the grill or smoker with no direct...

    I've cooked a many a sausage, but never seen them cooked that way.

    Frozen birds do not need it.

    Unfrozen do need it, but I wouldn't worry about it if you are smoking it.

    I want a new one too. I'll continue with the inexpensive vertical, but I want a combination gas, charcoal, offset smoker too. Sorry NadB. Gas is just too quick and easy when it is 90 outside.
