    Looking for something different than fried steaks or Italian dressing on tenderloin. Whatcha got?

    Amen..follow that with port wine reduction sauce: Sear your venison steak or strap medium rare with salt and pepper crust; Pour one bottle cheap port into a sauce pot or similar sized pot. Add a handfull of finely chopped golden or regular raisins, dash of salt and pepper, and reduce to about 1/4 of volume or so over medium heaqt. When sauce thickens enough to stick to spoon or tastes sweet and syrupy drizzle over thin sliced rare or medium rare venison.

    When it get's so miserably hot outside and grilling isn't fun, I've tried blackening seasoning. Similar to what shreveportdawg describes. IMO, the trick to great venison is the rare or medium rare temp. Cooked well done, it might has well be chicken.

    Stuffed with sausage, onion & chive cream cheese, jalepenos, smoke gouda and wrapped with bacon then smoked doesn't suck either
