Been thinking the same thing about McKnight. He’s a better runner than receiver and we’re thin at RB next year.
McKnight was a RB in HS (and a pretty good one at that!). He gained 20+ pounds during the offseason (per his own comments on one of the first fall practice videos). That hampered his effectiveness getting separation as a WR.
Belton was also a prolific runner in high school.
Holly could get as big as Canty, and he's strong as an ox.
Aaron could help us more at safety, especially with Kitchen coming back.
Woodall is about the same size as Tony Johnson, and has a mean streak.

Was Belton's injury a knee?

Pretty sure it was one knee his Jr. year and the other knee his Sr. year. Holtz allowed him to walk on, but never considered him at QB. He might get on the field at receiver one day, but it's very doubtful he ever plays at a RB. Pretty sure he will graduate soon and I expect him to move on with this life.
He's had some unfortunate breaks, but I think Belton's premium value is his ability to run the ball. He's a big kid, and he's fast. Of course at QB he had the ball in his hands every play and did plenty of running in West Monroe's system. I don't see him being able to contribute much at receiver. What about linebacker?
