I bet the "wildcat" package will be available next year, but you can already do this without too much trouble in a couple of different ways.
You can set your RB (or CB or WR or some blazing fast guy) to your backup QB and flip through the packages until you get "sub QB." You just have to remember not to pass with someone who can't pass and if your starter gets hurt you'll need to move things around to make sure your speedy WR doesn't end up at QB full-time. The advantage of this is that you can do it in any formation and then just switch back on the next play to your normal guy.
Or you can use the "formation subs" and choose one package where your RB replaces the QB. Again, you just have to remember not to try to pass with him. This is what I do (in some run-first formation, with plenty of option plays). It basically limits your formations by one, but I seldom use all the formations anyway and if you get a guy with 99 speed around the corner on the option - good times.
It is coming out this month and now it seems they have overhauled the XBOX 360 version. Apparently now recruiting will be more detailed where you have several things to pick from such as conference, acadmics, facilities, social life, etc. Now that they have facilities there they seem just to be the next system away from letting you upgrade your facilities. Maybe even it is in this one and I haven't read it yet. I'm tempted to buy a 360 just to try it and see.
Might be kind of fun to add marketing aspects to the game. Then we could all get the big JO thrill when we schedule that $750K game at Nebraska...
