I are a smoking machine.
I got the Weber One Touch grill (gold series), and I love it! They make good grills and smokers.
I just got the Char-Griller Duo (gas on left, charcoal on right). I'll be adding the side-fire box soon for some smoking. I'm loving this grill so far.
Weber is awesome
This summer I bought a very used 1/4" steel plate smoker with firebox under 1/2 of the unit. After cleaning it up big-time, I converted it to propane with a 15000 BTU cast-iron burner. To produce the smoke I place large chucks of hickory in a cast iron pan and place it on the burner. Once it catches on fire, the hickory puts out a ton of heat and later I cut off the oxygen to it to produce a good amount of smoke. So far I've done country ribs, brisket, spareribs, and brats, which I cook in beer. On tuesday will try a large ham and in December a turkey. I cook a lot at one time and freeze 80% of it. I have 3 grills and haven't used a single one since I started smoking.

I have really enjoyed my smoker too. Can't remember the brand but it is an upright with the door on the front, 5-6 racks and a liquid pan. You can't beat whole chickens off a smoker. I started making my own deer sausage but haven't quite gotten the recipe down to where I can brag.
Just curious, Dogtor. What brands of sausage?
