Trying out a recipe for hogshead cheese (without the head). I'll let you know how it turns out, and if I plan on making some for the fall. It could be segment two of our tailgating show after the cracklin one.

I may have exploded after the cracklin tailgate we have planned....

what part of that one billion doller state surplus will they use on the road system in BR...traffic seems to be bottled up ALL the friggin time I go down there...no wonder my daughter has road rage (actually she's had it for 10 years)...I'm afraid she will ram someone soon...
Dirty, there is nothing wrong with your health except for your diet.
Cracklins=good.
Hoghead cheese even with out the hoghead is nasty. And this comes from someone who ate cow brains and eggs as a child.
Well, it didn't turn out too good. Not enough meat for sure, and I think I needed more green pepper. Oh well, maybe I'll try again this weekend.
She doesn't mind. She likes it when I cook, so she tolerates my experimenting with things I like. She liked my cracklins. I don't know that she will eat the hogshead cheese, though. It's really a mental thing. My 5 year old loves it. Of course, he's weird anyway. I fried fish the other night and made some big old hushpuppies. I just knew he'd hate them. We had some left over and put them in the fridge. A couple of days later, he's chowing down on one of them. Cold hushpuppies. I guess I should have had him crumble it up in some milk and eat it. Cornbread in milk-what do you call that Ed?

What my grandfather would have called "depression food". The story I got as a child was that they made due with EVERYTHING they had to eat. Nothing went to waste. They called white gravy or milk gravy depression gravy. FWIW, I love both c/b in milk and white gravy.

cornbread with milk then pour syrup over it....my Dad consumed gallons of it..
I like cornbread covered in syrup (G.F.P. brand-don't think they make it anymore it was a light colored syrup but very thick)....and a huge glass of ice cold milk.
