I made a chicken and andouille gumbo just last week. I think it turned out pretty good for a first try. :icon_wink:
Had some duck breast that needed to be cooked so I made up a gumbo yesterday. It was one of my top 5 darkest rouxs ever.
I use frozen okra and add it about 30 minutes prior to serving. It is never slimy.
The roux must be cooked SLOWLY to as dark as you can stand it. Then good sausage is the next necessity. If you have duck, then you are in heaven.
