    Cooking a Pig ?????

    I was just given a whole pig. It is cleaned, dressed, head removed, and in a large ice chest covered with ice. What now?????

    Big pit, cajun microwave or quarter him up and throw it on a smaller pit. I like to make my own baste using oil, vinegar and seasonings; just mix what ever you like. We can be there this weekend :icon_wink:

    Go back and get the head for Dirty so he can make him some head cheese

    First get the head back. Put it on a tall stick. Go in your backyard, dance around it and chant. Every once in a while howl at the moon. If some of your friends play the bongos while you do it that would be ok too.

    Is this to be done while it is cooking?

    The Miss State thing looks like fun, but a lot of work too. Maybe we could build a pit like that between the TAC and the Argent Pavilion.

    I don't know. I have never tried cooking while I did that, but I'm sure it's fine. You'd have to be good at multi-tasking.

    The first thing I saw after clicking on that link was LSU. So now you have heard the first bad words about them.

    I agree - the brinkman is the best, but this thing won't fit in there like it is. I have almost decided I'm going to have to cut it at least in half. I was thinking of using Mrs.Chipdog's method for cooking brisket's in the oven for part of it: large pan, bottle of liquid smoke, equal amount of worchestershire sauce, cut up onions, cut up garlic, cover with foil, 230 degrees for 8 hours. Will that work? She is no help at all because apparently this is a real animal whereas I guess sausage and bacon somehow are not.

    You don't have to spend money on a store-bought Cajun microwave. A plywood box lined with foil will do just as well.
