I was going back and forth between the Weber and a side-box smoker. I love to BBQ (even though I'm not that good at it). We've been a gas family for a while and while I love the convenience, I could never get it hot enough to sear a steak the way I like it. I can do some indirect grilling and get a decent smoke flavor with the Weber. Can't wait to put it together and get to work! In-laws are coming in tonight and I think I may have to show off a little.

The drunk chicken turned out GREAT! I seasoned it with Tony's and garlic salt.

Tried something different (for me) this eve.
Made a couple pizzas over charcoal on my kettle.
Discovered I didn't have any mozzarella on hand, so made do with some Parmesan and cheddar. Mostly like LOTS of toppings on my pizza, anyhow; not so particular about the cheese.
Used a homemade rig for indirect heat; had to scrounge to find some 12 oz. cans (32 oz. wouldn't fit under the lid )

Used Cowboy lump charcoal 'cause it burns really hot, but forgot how quickly it burns up. That, coupled with the fact that the rain came blowing in, and the outside temperature dropped like a rock => couldn't keep the cookin' temperature up as high as I wanted.
Crust was not quite brown enough, not anywhere near brown enough on the 2nd pizza.
Needed MORE FUEL; MORE FIRE.
Next time, I'll def. do better. :icon_wink:
