I remember hearing on KNOE or KTVE during the summer or maybe during last winter that there was going to be a Portico's opened up in Ruston. Anyone know if it is happening?
Yeah, it is almost open. It is located on Highway 33 North across from Davison Trucking (Farmerville Hwy) They are finishing up the construction and landscaping and have been getting their staff interviewed and trained. I have never eaten at Portico's but have heard pretty good things about it.
Good question. It is a heavily traveled road and I had given serious consideration to relocating in Karl Malone's development. But the reality for me is that I have somewhat "established my restaurant" being close to Tech, Grambling, and I-20. So I am going to try and stay close to where I am when the time does come that I have to build a new place. Farmerville Highway is much better since they widened it and hopefully that area will continue to grow.
I am kinda confused as to why the area behind Wal-Mart hasn't seen more development than it has. I guess cost has been pretty unreasonable. I know it was for me!
Are there any good restaurants out there along the 63/167 stretch?
This may not be the appropriate thread for this, but anyway, here goes.
Does anyone know have a macroni-and-cheese recipe that isn't dry? I haven't found one yet that fully satisfies that requirement. I certainly don't want it to the consistency of soup, but neither do I want it so dry that you have to drink a gallon of water with every serving!
I don't have a receipt, per se, but reading that it seems like you just got to figure out how to make you a cheese sauce. Butter and flour, light roux. Melt in cheese, little salt, cut with milk/half&half/cream until you have the desired flavor, consistency and required volume for your pasta. On the easy, it works the same for a white cheddar mac and cheese as it does for a parmesan for pasta and shrimp...

				My House!
Smoked a brisket for the old lady's birthday this past weekend. Had a nice 1/4" smoke ring on the meat, too. It was also my first attempt at smoking, as I recieved an offset smoker/grill for christmas:
