Not a fan of cracker crust nor the chicago deep dish. New York style is my fav.

Below is my favorite pizzeria, Carmine's in Brooklyn.

You haven't really had pizza until you've ordered from this menu.

Nothing like a little corn and some mayo on your pizza.

This is a serious statement. I've had to give up pizza for health reasons. My acid reflux is too bad that red sauces cause me problems. Thanks to this crater sized hiaital hernia there is nothing to protect my esophagus from the acid in my stomach which keeps my ulcers inflamed and sometimes bleeding. Thankfully, that's under control now, though. My disorder has damaged my swallowing mechanism to the degree that they can't repair the hernia, so I get to live on PPIs and non-red sauce and mildly spicy foods for the rest of my life. And I love me some pizza. I cheated last night and ate a small piece and am still fighting the acid.

Went to Raw last night. A little pricey, but very cool decor and good food.

Don't know that this goes in the category of Ruston eating places, but does anyone know what is going on the SW corner of Hwy 33 and E. Kentucky across from the bank, well actually between the two banks--used to be Texaco/Country Cupboard. Is it another eating place, or they're just clearing it to make room for somethiing when the time/money is right?

Kinda curious about that as well, but also about the other side of Kentucky at 167. There used to be a house there with alot of land, but they've torn it down and are clearing out trees and stuff.

This is a development that Mr. Wayne Hunter (he is the man who owns the shopping center behind Raising Cane's that has El Jarrito, Maggie Moo's, etc ... in it as well as the shopping center that has Smoothie King in it) is doing. It is called NEST and is a mix of planned residential homes with a portion of it supposed to go to commercial development. You will notice that they have left quite a few more trees than normal -- this is what Mr. Hunter said he was wanting to do with this project. He wanted the homes and commercial part to "blend" with the natural surroundings. I went to the official unveiling of the project on the Lincoln Parish CVB last year and it was interesting.

I've been in-touch with both Malone and Hunter developers for quite some time now and I'm still very hesitant of the Lincoln Parish/Ruston market. Mostly due to alcohol laws and the fact that summer business/ or lack thereof scares the hell out of me as wel as the fact that Ruston has done more to hurt itself in small business fashion that any other town I've ever studied demographically. The banks are good-ole-boys as are the city council/real estate/zoning- ect.. Ruston is WAY behind the times as far as small business incubation is concerned. Especially for a college town. This comes from a guy that has opened and/or facilitated the opening of more than 7 small businesses in La and TX.

Can you do it without red sauce? What about calzones?

I think so. I have to. If it's a light red sauce like in some soup bases, I think I'll be alright, but haven't tried it yet. Really, I think the main problem is the ulcers. Once I can get those healed, then I think I can venture out and eat more of what I can't have now. It's really just one big ulcer that's giving me the problems right now, and I suspect that it'll take a good month or two before it's healed up.
